Thomas Cauquil & Vincent De Soyres
Longtime friends, Thomas and Vince met at Albert de Mun Hotel and Catering School in Paris in 2005, where Thomas was training to be a chef and Vince was honing his skills as a brewer.
Avid explorers, in their spare time the pair would travel all around Europe seeking food and beverage inspiration, and organised expeditions to the volcanoes of far east Siberia. It’s here where they came up with the concept of launching their own restaurant and brewery.
With the craft beer scene taking off in Australia, Vince moved from the Ninkasi Brewery in Lyon to the Little Brewing Co. in Port Macquarie in 2010, followed by the Flat Rock Brew Café in Naremburn.
During this time, Thomas developed his craft at Michelin star restaurants including Le Violon d’Ingres* in Paris and El Chaflán in Madrid, and completed a charcuterie internship with the esteemed Meilleur Ouvrier de France (M.O.F).
Thomas joined Vince in Australia in 2013, and they transformed their dream into a reality with the opening of Frenchies in 2017, where their vision is to create a space ‘for food & friends.’
As of 2023, their offering has grown to include a bakery and pâtisserie, and a second brewery, both of which are located within The Cannery precinct in Rosebery, making Frenchies the ultimate one-stop location for all of peoples’ French food and beverage needs.
